Romadur is a cheese with a significant piquant taste and aroma, popular in all the stages of its ageing. The mature cheese is white as cream when cut, while covered on the surface by a rosy paste-like layer and the chilli spices which add a spicy flavour. The consistency is soft to firm, with a mildly recognizable cottage-cheese core. The aging also continues after removal from the maturation cellar, so that you can savour it in its various degrees of ripening, depending on your personal taste. Thanks to the distinct aroma, it is necessary tostore it separately from other kinds of food, or in a closed container or under a glass lid.
